Pepperoni Pizza Rings

If there’s one thing you should know about me it’s that I love pizza in every form. I’m always on the search for new ways to enjoy one of my favorite foods and this handheld version is definitely a winner. According to my brother these low carb pepperoni pizza rings are “better than jalapeno poppers”, I never thought I’d hear those words!

With three simple ingredients and a minimal effort I’ll be adding these handy little pizzas to my regular meal rotation.

Low Carb Pepperoni Pizza Rings

Here’s what you’ll need!

Ingredients needed per pepper pizza:

  • 1 bell pepper ring (approx 20g)
  • 14 g (0.5 oz) pepperoni, diced.
  • 1 oz mozzarella, shredded.

For this batch of 4 I used:

  • 80 g fresh bell pepper, cut into rings.
  • 2 oz pepperoni, diced.
  • 4 oz mozzarella, shredded.


  • Marinara for dipping.

Preheat a non stick, or well oiled cast iron, skillet on medium heat. To create the pizzas you’ll be doing a little bit of layering. First place the pepper ring down, then add a 1/2 oz of shredded mozzarella into the middle to create the base, followed by a 1/2 oz of diced pepperoni to create the filling, and finally another 1/2 oz of mozzarella to top each pizza off.

To help the top layer of cheese melt a little faster you can add a lid on your skillet to trap some steam. If melted your shredded cheese will be less likely to fly everywhere when you attempt to flip.

Be patient when it comes to the first flip, you want the bottom layer of cheese to really crisp up. If you flip too early you may just have a melted mess, don’t be afraid to let it cook. As long as your pan isn’t too hot you shouldn’t burn your cheese, your are looking for a nice golden brown color.

Once they’re ready to flip get them turned over and allow the other side to cook, the second side should not need to cook as long as the first.

Once done set to the side to cool to prevent burning your hands and your mouth. Letting them cool for a few minutes will also make them sturdier, allowing you to dip in marinara if desired.

This recipe was simple in theory and execution, no need to make food more complicated than it has to be. I hope these low carb pepperoni pizza rings will bring you as much joy as they’ve brought me!

As someone who can’t digest large amounts of almond flour this is just another alternative to the ever popular fathead pizza recipe that’s floating around the internet. If you’re not a bell pepper fan you can always go with a classic skillet pizza instead.

There’s no end to the creative possibilities when it comes to pizza!

Pepperoni Pizza Rings

  • Servings: 4

  • 80 g fresh bell pepper (approx.)
  • 4 oz mozzarella, shredded.
  • 2 oz pepperoni, diced.
  • Marinara for dipping, optional.


  1. Pre heat a non stick skillet on medium heat.
  2. Slice your bell pepper into 4 small rings, approx. 20 g each (it doesn’t need to be exact).
  3. Place the rings in your heated skillet. In each ring layer 14 g mozzarella, 14 g pepperoni, and another 14 g mozzarella.
  4. Be patient and let the bottom cook until crispy, time will vary depending on your stove. If you try to flip it too early it will be a melty mess.
  5. When ready flip your pizza rings over and cook the remaining side.
  6. Let your pizzas cool before serving and enjoy with your favorite marinara for dipping!
